KAWIT, Cavite -- No, "Alsa Masa" is far from the revolt of the masses.

The photo exhibit at Museo ni Emilio Aguinaldo dubbed "Alsa Masa" is actually a showcase of Cavite’s historic bakery traditions, where “alsa” refers to an increase in volume (due to yeast) while “masa” is to knead (a dough by pressing, squeezing or mashing with hands).

Titled “Alsa Masa: Cavite Bakery Traditions”, the exhibit runs until June 21 and is part of Museo De La Salle’s Glimpses of Cavite exhibition program.

MDLS Director Cecille Torrevillas-Gelicame said on Monday the exhibit aims to pay tribute to selected panaderias (bakeries) in Cavite, captured in still photos by homegrown photographer Ohsie Austria.

Inspired by the book Panaderia: Philippine Bread, Biscuits and Bakery Traditions, “the exhibition aims to highlight a rich aspect of the province’s culinary traditions,” Gelicame said.

The exhibit is a "reflection of Caviteños joys, passion and triumph to sustain a local bread tradition despite the rapid development in the province, advent modernization environmental challenges, growing opportunities for people to work in other industries, completion and diversification of palates due to globalization".

The exhibit, done in partnership with the National Historical Commission of the Philippines, culinary historian Ige Ramos, Canon, Cavite Studies Center and the Provincial Government of Cavite through its Provincial Tourism and Cultural Affairs Office, features Dizons Bakery (founded in 1930s), Pan Antigua of the Benuete Family (established in 1935), Baloy’s Bakeshop, Kaibigan Bakery, Malens Bakeshop, Naceda Bakery, Roadside Breads and Burgers (formerly Tony Baruete’s Bakery) and Silang Bakery.

Museo ni Emilio Aguinaldo is located at Kaingen village here and is open from 8 a.m. to 4 p.m., Tuesdays to Sundays. (PNA)
